Cold pressing neem oil is the best, because most active compounds remain intact. It is also the oldest method of extraction. It utilizes a mechanical device that squeezes the oil from the dried seeds. Always try to get cold pressed neem oil where possible.

The next process uses hot water vapor and heat. Though this technique retrieves a larger quantity of oil from the neem seeds than using a mechanical press, a lot of the active compounds in the neem oil may be made useless by the exposure to high heat.

The technique is called chemical solvent extraction, and in most cases hexane (white gasoline) is the chemical used.
